La baguette francesa es uno de los símbolos más grandes de la nación. El ritual diario de comprar pan fresco está arraigado en su cultura. En París hay un monton de panaderías para elegir.

Y no es cuestión de gustos, realmente hay un concurso que se hace todos los años en donde se selecciona la ganadora.

Concurso anual para encontrar las mejores baguettes en París

La ciudad de París organiza la competencia anual Best Baguette of Paris para encontrar la mejor baguette de los cientos de panaderos de toda la capital.
El ganador recibe el prestigioso premio, 4000 euros y, más importante, se convierte en el proveedor de pan para el palacio del Elíseo durante un año.
Para participar, las baguettes deben tener entre 55 y 65 cm de largo y pesar entre 250 y 300 g con un contenido de sal de 18 g por kilo de harina.
Las baguettes están numeradas para garantizar que sean anónimas. Los jueces buscan características específicas en la forma en que se ha cocinado, la calidad de la miga, su sabor, fragancia y apariencia.
Cada una de estas categorías recibe una calificación de 0 a 4. Luego, se eligen 30 panes para pasar a la siguiente ronda donde se decide la mejor baguette parisina para ese año.
Los 10 mejores panaderos son nombrados, pero solo el ganador obtiene el prestigioso premio y título del año.
Esperando para el concurso de 2020 que se va a desarrollar en abril.

2019
Fabrice Leroy de Leroy-Monti

Al frente de la panadería, Fabrice Leroy ganó la 25ª edición del Gran Premio de la cultura de la tradición parisina [Gran Premio de la mejor baguette tradicional parisina].
Fabrice Leroy derrotó al ganador del año pasado Mahmoud M’eddi de la panadería M’seddi en el distrito 1 de París y gana el concurso a la mejor baguette en París 2019.

2018
M’eddi de Boulangerie M’seddi

El precio del 2018 se lo llevó Boulangerie M’seddi, cuyo propietario  es hijo de un inmigrante tunecino, y es una prueba de que la idea de “francés”, y lo que es ser francés, está cambiando.
“Mi padre fue panadero en París durante 30 años”, dice M’eddi . “Nací en la panadería y me encantó todo lo relacionado con la panadería desde que era pequeña: los pasteles, el pan, los olores”.
