La mejor Baguette de París 2018

Como todos los años, esperamos saber el ganador de este concurso, que tiene mucha tradición en París.

Hay que tener en cuenta, que además de orgullo de ganar y la publicidad que se optiene.  El ganador recibe un precio de 4000 y la posibilidad de ser el proveedor oficial del Palacio Elíseo.



El concurso

Un jurado de 15 buenos hombres y mujeres se reunieron para este Gran Premio de la Baguette en La Chambre Professionnelle des Artisans Boulangers du Grand Paris.
Para cumplir con los estrictos criterios, la baguette, que mide entre 55 y 70 cm de largo y que pesa entre 250 y 300 gramos, debe estar hecha de cuatro ingredientes: harina de trigo, agua, levadura y sal. No se puede congelar ni contener conservantes agregados, y debe venderse en las instalaciones donde se hornea.
Los miembros del jurado fueron Guillaume Gómez, MOF 2004, el chef ejecutivo de Elysée Palace; Franck Thomasse, presidente de los Boulangers du Grand Paris; el ganador del año pasado, Sami Bouattour; y seis Parisiens y Parisiennes, elegidos por votación, para detectar la calidad de los ingredientes, la cocción, el sabor, el aroma, la  textura y el aspecto.
“La baguette francesa debe ser catalogada como un tesoro cultural intangible de la UNESCO”, dice el presidente Emmanuel Macron. “La baguette es la envidia de todo el mundo”, insiste, en apoyo de la asociación nacional de panaderos que promueve la aplicación, de manera muy similar a la comida gastronómica francesa (inscrita en 2010).

El ganador

El precio del 2018 se lo llevó Boulangerie M’seddi, cuyo propietario  es hijo de un inmigrante tunecino, y es una prueba de que la idea de “francés”, y lo que es ser francés, está cambiando.
“Mi padre fue panadero en París durante 30 años”, dice M’eddi . “Nací en la panadería y me encantó todo lo relacionado con la panadería desde que era pequeña: los pasteles, el pan, los olores”.
